Hi Bill. Cheers. Yes it's going to be interesting after Christmas finding out what specific foods aggravates things. Although I know gluten and simple carbs definitely mess things up, it will be good to find out how much I'm able to tolerate again before problems arise. The worst that can happen is sticking to this regime for longer than I'd hoped. I know that my improvement hasn't been spontaneous only in as much as there are definite trigger foods that I know will cause a flareup. As I mentioned, I've cheated a few times recently and suffered the consequences - thankfully minor (which leads me to hope that I'm actually healing inside.) The fringe benefits are very welcome as well!
When I can eat normally again without having problems days or weeks down the line I'll know I've got this thing licked. However, I'm not holding my breath on this! I'm sure that the recovery time will be longer than I first anticipated. But, and it's a big but (no pun intended, as mine is shrinking weekly), I have good management of the condition now, so if recovery takes longer then so be it.
I will keep a food & symptom diary when re-introducing foods as I found that a very helpful way of identifying the culprits in the first place. It's really easy to forget what you've eaten and I can't stress how important it is to keep a record that you can look back at to try and identify patterns.
