Alan,
Thank you for sharing your story and with such detailed food recommendation. I have the same as yours - hands and feet. I've been on diet on and off, due to lack of discipline. Currently, I am on juicing and salads for a week and within three days free of pain and all sores healed. I'm still itching a bit, but most of the plaque cleared. I actually resume my daily hour long walks as of today. I DO know that foods are the culprits. However, one caveat to anyone embarking on diet: We all need to find our own triggers. I can't have night shades, soy and citrus, and recently I am finding most allums- garlic and onions a problem. It seems the anti-inflammatory diet is what works for me: Eating foods more towards the alkaline base. Yet, fish and meats are okay -- even though red meat is not recommended for the anti-inflammatory diet. But I don't seem to have a problem with it. It's very complicated for me, but to manage the flare ups, I would do the juicing and salads for a few days. I know I need to exercise more discipline, but it's hard when the list is so long and I don't particularly like eating meat. I haven't tried avoiding gluten, but was somewhat suspicious of if, since after eating foods with gluten, I am usually lethargic and not mentally alert.
I do believe leaky gut syndrome is at the core of most inflammatory conditions. Also, like you I've found doctors reluctant to admit foods are the triggers. I also believe that by managing psoriasis through food has helped my overall health. I belong to a large family. Everyone else in my family has thyroid, BP, cholesterol issues, but I don't.
